Fruit crumble

Ingredients * 100g of each fruit: plums, apples, pears, rhubarb * 100-175g Demerara sugar * 1 tsp lemon juice

For the crumble topping: * 150g plain flour 4 75g cooking margarine * 50g caster sugar

To serve: * 300ml half pint single cream or custard or vanilla ice cream

Makes: Four servings

Preparation time: 35 minutes

Cooking time: 25 minutes

A Preheat the oven to 190xC.

A Prepare the fruit by cutting it up into small bite-sized pieces, removing any seeds or stones. Place a mixture of the prepared fruit at the bottom of an ovenproof dish.

T Measure out 100g of Demerara

sugar and sprinkle it over the fruit. Add a teaspoon of lemon juice and mix well.

T Sift 150g of plain flour into a mixing bowl. Measure out 175g margarine and, using your fingertips, rub this in until the mixture resembles fine breadcrumbs. Finally, add 50g of caster sugar to the crumble.

T Pour the crumble mixture evenly over the prepared mixed fruit.

A Place the crumble into the preheated oven and cook for approximately 25 minutes or until the topping of the crumble is golden brown.

To serve: This crumble is delicious served with single cream, custard or vanilla ice cream.
