Potato and bean salad Ingredients

Ingredients

4 medium potatoes, 450g French beans, 1 tin of sweet corn, 1 tin of kidney beans, 4 spring onions, finely chopped 225g creme fraiche or plain yoghurt, pinch of salt and pepper, mustard powder and nutmeg, dash of Worcestershire sauce.

Serves Four people

Preparation time 35 minutes

Cooking time 20-25 minutes

A Peel the potatoes, cut into even- sized pieces and place them in a saucepan of cold water. Add a pinch of salt and bring to the boil over a medium heat. Reduce heat and simmer for 20-25 minutes.
