T = together A = adult T Break up the chocolate and place it in a heatproof bowl. Place the bowl over a small saucepan of simmering water. Leave the chocolate to melt. Do not allow any of the water to splash into the chocolate.
T Separate the eggs, place the egg white into a large bowl and place the yolks into a small bowl.
A Place the double cream in a mixing bowl and whip up the cream until it is thick and will hold its shape.
A Remove the chocolate from the heat and allow it to cool.
T Whisk up the egg whites until they form soft peaks.
T Now the ice cream is ready to be put together. Pour the egg yolks into the chocolate and mix well. Add the stiff cream and egg whites and fold carefully. Now add the creme fraiche and chocolate chips, and mix well.
T The ice cream is now ready to be frozen. Place the mixture into a rigid airtight plastic container. Seal the lid firmly and place in the deep freeze for at least 12 hours or until set.
To serve: Remove the ice cream from the freezer at least 15 to 20 minutes before you want to eat it. This allows it to soften and makes it easier to scoop out. Serve with dessert biscuits or wafer biscuits or in a cone.
