Quick Sausage Casserole Ingredients: 450g pork, Quorn, or chicken or turkey sausages, 25g cooking margarine, 1 onion, 2 carrots, 1 tin chopped tomatoes, 1tbsp tomato puree, 11/2 pint vegetable or chicken stock, 1 tbsp plain flour, pinch of salt, pepper and nutmeg, 1tbsp Worcestershire sauce, 100g frozen peas
Quick Sausage Casserole

Ingredients: 450g pork, Quorn, or chicken or turkey sausages, 25g cooking margarine, 1 onion, 2 carrots, 1 tin chopped tomatoes, 1tbsp tomato puree, 11/2 pint vegetable or chicken stock, 1 tbsp plain flour, pinch of salt, pepper and nutmeg, 1tbsp Worcestershire sauce, 100g frozen peas

Children's age: All ages

Makes: Serves two to four

Preparation time: 35 minutes

Cooking time:30-40 minutes

A Pre-heat the grill.

T Prick sausages all over with a fork.

A Place sausages under the high grill heat and brown them on all sides.

A Peel and finely chop the onion and carrot.

A Turn the sausages. When they are golden brown turn the grill off.

T Measure out 25g margarine and place into a saucepan or ovenproof dish over a medium heat. Add the onion and carrots and cook for 2-3 minutes until softened and golden. Remove from the heat.

T Measure out tablespoon of plain flour. Add flour to the onion and carrot and stir well. Put the dish back over a low heat to cook the flour and margarine. Season with salt, pepper, nutmeg and Worcestershire sauce.

A Remove from heat and add tinned tomatoes, tomato puree and stock.

A Bring the sauce gently to boiling point. Allow to thicken and then simmer.

A Now add the cooked sausages to the sauce and put back over medium heat, or bake in the oven at 160xC for 30-40 minutes.

A Ten minutes before stew is ready, add the frozen peas to the sausage casserole to add flavour and colour. Cook until peas are ready.

To serve: Delicious with rice, vegetables, mashed potato or pasta.
