Cookery corner: Incy Wincy's Citrus Sticky Chicken

Children will love this combination of chicken and vegetables in a sticky sauce.



4 skinless chicken breasts, cut into chunks

1 red pepper, diced

1 courgette, diced

2 red onions, diced

1 tsp Dijon mustard

1 tbsp honey

2 oranges, juice and zest

1 lemon, zest only

1 tbsp chopped coriander


Fry the chicken in a little rapeseed oil in a large pan until brown.

Add the onion, courgette, peppers, orange juice and zest, lemon zest, honey and mustard.

Simmer for 10-15 minutes until the sauce has thickened and the chicken is cooked through.

Add the chopped coriander and serve with rice or couscous.
