Its sad that you've had this experience - its not that bad out there - honest!!
If its of any consolation, you can complete roughly 90% of your NVQ on your own. You need to take charge of your portfolio, do your own research and build up your own evidence. I'd recommend you do it systematically. Start with C2.1 and write a reflective account to meet the PC's and the majority of the range and related KUS. Add a written statement to cover other range and KUS. Do the same for every element. Identify the PCs that your assessor needs to directly observe and plan to cover that when she comes along making sure you also cover a range. (if you allocate 10 mins per element, you could do 6 elements in an hour). If you don't think your assessor is going to be much good - you write the reflective account of your observation, ask them to read it through and sign to say they saw you do it.
C16, and the majority of M7 & C15 don't have to be directly observed so there's 3 units you can get under your belt practically straight away. For optional units I'd recommend MCI/C4, M8, and P5. Its not that they're 'easier to do' but can are easier to gather evidence for.
